You may be bored to death of carrot sticks and steamed carrots, but that’s not the only way to eat them! Carrots make a wonderful puree or soup, with just a hint of sweetness. Carrots are vital for your eye, skin, and hair health, so it’s a good idea to add more to your diet. You can always try shredded carrot salad or glazed carrots if you’re sick of the classic preparations.


Spinach is one of the best veggies for veggie haters! It’s fairly flavorless, and it’s light and easy to eat. It’s also one of the most nutritionally-rich vegetables, packed with iron, folic acid, Vitamin C, fiber, and antioxidants. You can dress spinach up with a light vinaigrette, add almond slices, eat it raw, or stir fry it with soy sauce. Definitely a veggie hater-friendly option!

Raw broccoli doesn’t taste as bad as you might think, or lightly grill it–taking it off the fire before it turns too dark. Don’t let the broccoli get too soft, as that’s when it turns unappealing.
